Fiesta Chicken & Rice Wraps

     Hello!  It's Recipe Tuesday and today's recipe for chicken and rice wraps comes from Cambells Kitchen.com.  If you use a rotisserie chicken this is a super quick and easy recipe that uses items you most likely already have in your pantry.  We've also found that the filling, mixed with refried beans, makes a wonderful side dish for tacos or fajitas.

Fiesta Chicken & Rice Wraps
  • 1 can condensed cream of chicken soup
  • 1 cup salsa (I prefer mild)
  • 1/2 cup water
  • 1 cup uncooked instant rice
  • 2 cups cubed cooked chicken
  • 4 flour tortillas (10")
  • Cilantro
  • Shredded cheese

1. Heat soup, salsa and water in a 2-quart sauce pan over medium heat to a boil; stirring occasionally.

2. Stir in the rice and chicken in saucepan.  Cover and remove from heat.  Let stand 5 minutes.

3. Spoon about 1 cup chicken mixture down the center of each tortilla, sprinkle with cheese and cilantro.  Fold tortillas around chicken mixture, place seam side down on plate and slice in half.
